Korean chili pork chops with leek and sesame relish

Korean Chili Pork Chops with Leek & Sesame Relish

A quick chili rub with gochugaru, a few minutes over medium-high heat, and a bright leek and sesame relish spooned on top. Dinner in about 30 minutes.

Serves 4 · Prep about 15 minutes plus 10 minutes resting · Cook about 6 minutes

Ingredients

  • 4 pork chops
  • Korean chili seasoning: 2 tablespoons salt, 1 teaspoon garlic powder, 1 teaspoon gochugaru (Korean chili flakes), 1/4 teaspoon ginger, 1/8 teaspoon coriander, 1/8 teaspoon cumin
  • Leek & sesame relish: 1 cup finely chopped leeks, 2 tablespoons chopped parsley, 1 tablespoon roasted sesame seeds, 1 tablespoon lemon juice, 1 tablespoon roasted sesame oil, 1/2 teaspoon salt
  • Garnish: fried shallots, fried garlic chips, fresh parsley

On the Grill

  1. Stir the seasoning ingredients together in a small bowl, and the relish ingredients in another.
  2. Coat both sides of the chops generously with the seasoning and let them rest about 10 minutes.
  3. Preheat the grill to medium-high while the chops rest.
  4. Grill 3 minutes, flip, and grill 3 minutes more, until lightly charred.
  5. Plate the chops, spoon the relish on top, add the fried shallots and garlic chips, garnish with parsley, and serve right away.

For doneness, the USDA recommends cooking pork chops to 145°F, then letting them rest 3 minutes. Check with a meat thermometer in the thickest part of the chop.
